Ingredients Vanilla-caramel cream:

- 50 ml hot milk
- 1 vanilla pod
- 150 ml whipped cream
- 200 g mascarpone

This recipe was developed exclusively by Fabian Dietrich for Sawade and offers the mousse au café praline a delicious home between vanilla-caramel cream and rum plums. Flavours that harmonise perfectly with each other and make the taste buds dance.
Preparation
Heat the sugar in a pan until it is completely caramelised. Now add the hot milk, stirring constantly, until a smooth caramel sauce has formed. While the caramel sauce is cooling, add the seeds from the vanilla pod to the cream and whip until stiff. Next, place the pickled plums in a pan with the rum and plum liquid and simmer for 5 minutes to reduce the liquid. Now mix the mascarpone with the cooled caramel sauce and then stir in the vanilla cream. To serve, spread the vanilla caramel cream on plates and form a well in the centre with a spoon. Place the plums in the centre and garnish with the mousse au café pralines cut into pieces.
